I had one of the best days today filled with things I love. I decided to,change up my workout this week and do three full body workouts. This is way out of comfort zone. As long as I can remember I have always done a couple of muscle groups or individual muscle groups per workouts. But my goal for my life is to have to pressure and go with that feels right. It was a fabulous workout! Since the sun was shining and I had the time i decided to take the pup for a walk no time frame or speed just a pleasant walk in the sunshine what a way to brighten anyone’s spirit.
And of course maybe a little baking. At first a little voice in my head keep telling me not to bake that I wouldn’t be able to handle the food. But I really listened deep inside and did what gives me joy and happiness
I like this recipe because it make one muffin. I ended up doubling the recipe and made two muffins since I wanted to bring one to my coworker to try.
2 tablespoons pumpkin puree
3 tablespoons whole wheat flour
1 tablespoon pure maple syrup
1 tablespoon brown sugar
1/4 teaspoon baking powder
1/2 teaspoon pumpkin spice
1 tablespoon almond milk
Mix all ingredients put in a muffin pan and bake at 350 for 15-18 minutes
Perfect breakfast with a piece of fruit.
Since I had pumpkin to use I have been looking at this recipe
I have a love hate relationship with yeast dough. Even with this recipe I continue to struggle with getting the dough to rise. I know this dough did not rise like it should have I just went with it. Nothing a little sugar glaze couldn’t fix. But I will be visit this recipe again and get the light fluffy dough next time. But for now some will have to eat this and hubby didn’t seem to mind.
