Although I haven’t posted doesn’t mean I haven’t been doing my share of recipe trying. There are SO many recipes to try out there.
On Sunday morning I wanted to try this Quinoa Porridge that I saw on Heather’s Blog. It looked quite interesting and I for sure have enough quinoa (4 pounds) to give it a try. 
Although mine didn’t look quite as delicious as her it was quite delicious and it made a ton and I am all about volume. I like that it also keep me quite for full for a long time which is a bonus. I think next time I won’t toast it quite as long. But I will definitely be trying it again.
Sunday for dinner I saw a recipe for a Tamale Pie that sounded good. It was quite simple to make the only down fall in my book is that it made a ton and hubby didn’t seem like he was interested in giving this one a try. So I froze half of it for another time and I have pretty much been eating this one for lunch ever day. 
The only thing I will do different next time is make more of a cornbread topping this one used polenta which was good. I just think I would like more of a bread type topping. I did see one on Peas and Thank You that I might give a try next time.
I had steamed broccoli with this and made creamy beet soup to go with it. I have to admit I truly had my reservation about this. First I am not much of beet fan and the thought of making it as a soup frightened me. But I had several small cans of beets in my cupboard that I had no idea what to do with so it sounded like a good idea.
It was so beautiful it almost look like some kind of raspberry dessert. It was really quite delicious and it had a sweet taste I was pleasantly surprised.
Last Friday when I knew my daughter was coming I decided to make her some cookies. I guess the real truth is I wanted to try them and I needed an excused to make them and I knew if some one else was here to eat them I might not eat the whole batch. I saw these cookies over at Tiffany Blog, a blog if you haven’t noticed that I have been doing a lot of recipes from . These were no bake cookies which I liked the idea of. No Bake Peanut Butter Chocolate Coconut Oaties
My daughter really, really liked these and I sent her home with the recipe. I am so glad that I made them while she was here because I could tell that I wouldn’t have be able to control myself on these ones. You must give them a try. A really great treat for the kids.
As so can see I have been enjoying try all kinds of great recipes and I have another one that I had today that I can’t wait to share with you. It was a quick and easy meal. Gotta love those kinds!
I finished week two of the Couch to 5K. It is going well and I am looking forward to the challenge of increasing my running time on Thursday. I also did a DVD yesterday for a work out. I truly need to start doing more strength training again. I could really feel it in my lower body today.
Have you tried any new recipes this week? Have you tried a recipe that you weren’t sure you would like but realized that it was quite good?
I have such a huge list of to-try recipes it’s not even funny. And I just keep making up my own on top of it all LOL
So glad you enjoyed the porridge. We buy our quinoa in bulk as well. Love Costco.
Haven’t tried any new recipes this week. Need to remedy that soon!
